I recently signed up for a pastry program to prepare for the big master exam. The course takes place in a pastry school two days a week. One day for four hours and the second day for 8 hours. So they basically try to teach you all the basics you need to know about the world of baking.
The big pastry program is about to start and suddenly I am getting a little nervous. Just to give you an idea of the way you become a pastry chef in Germany and Austria – you usually do an apprenticeship for 2 to 3 years first. That is where you will work in an existing bakery as an apprentice baker and you also go to pastry school.
