Don´t let the fear of striking out keep you from playing the game!

The big pastry program is about to start and suddenly I am getting a little nervous. Just to give you an idea of the way you become a pastry chef in Germany and Austria – you usually do an apprenticeship for 2 to 3 years first. That is where you will work in an existing bakery as an apprentice baker and you also go to pastry school.

After these 2 to 3 years you will have your final exam. Than you are a baker. After a few years of working experience you can go to the pastry program and with a whole lot of studying and a good amount of knowledge you can try to pass the huge exam to become a pastry chef. You will have an oral exam (45minutes), a written test (5 hours) and then the practical exam (that will actually take 3 days).

So, what I am trying to do is passing the exam with only a basic pastry course that lastet 5 weeks and the big pastry program that is starting a only a few days. after that I will have to take the exam. I am weirdly confident that I can actually pass the test… unfortunately I have no idea what exactly I will have to expect. Today I picked up a few more chefs jackets and then it just hit me – I am really doing this! I will take this exam, I payed a few thousand euros for the courses and other fees and I will honestly try to pass the exam with only studying for a few weeks – therefor I must be insane!

I was thinking about backing out, about just getting my money back and not doing it. But I have to at least try! It is not just my dream to become a pastry chef but to open up a bakery of my own, being my own boss and making the best cakes that Austria has ever tasted! Thats when I remembered the quote from the movie “A Cinderella Story” with Hilary Duff… Her dad said “Don´t let the fear of striking out keep you from playing the game!”. So I decided to live by that rule and I am sure I will pass this test. And if I don´t I will just try again next year.

only 5 days left til the program starts and I will be ready….
