Basics: Biscuit Cake

This cake is fairly easy and I mostly use it for stacked cakes like wedding cakes, naked cakes etc. This recipe comes in handy for a lot of different cake situations.The cake is soft and fluffy, sweet and tastes like vanilla. I really really like it and it is also used for a marble bundt cake or a simple cake with fruit on top.

You will need:

  • 250g softened butter
  • 250g flour
  • 4 eggs (medium size)
  • 250g caster sugar
  • 2 Teaspoons Vanilla Extract
  • Lemonzests of half a lemon

Whip the butter with the sugar, vanilla and lemon until it turns white and fluffy. One by one add the eggs and mix after every egg until it´s incorporated. Now, sift the flour (it is important that you sift it to avoid any lumps in your batter) and with a spatula gently fold it in.

Spray your baking pan or cake ring with a non stick baking spray, put in the batter and bake at 180°C for about  15-20 minutes depending on you oven. See if your cake is done by poking a thin object into the middle. If it comes out clean your cake is done. *Please don´t open the door too soon (give it at least 10 minutes before opening the oven) or else you will disturb the baking process and your cake will turn out flat and dense.

If your cake is done and cooled down you can take it out of your baking pan.
