German Cinnamon Stars

Ho Ho Ho, it´s christmas time. I can´t believe how fast this year went by! I feel like we just celebrated christmas a few days ago… how can it already be christmas again?!

Well, I don´t want to complain, I mean I do love christmas, at least I like the way the smell of cinnamon fills the air, I am always looking forward to the first snow. And what I love most about christmas time is the baking part of it. I am a huge fan of gingerbread houses, christmas cookies and fruit loaf. Today I will show you the recipe of my all time favourite christmas cookies – German Cinnamon Stars!

You will need:

  • 250g confectioner´s sugar
  • 3 eggwhites (90g )
  • pinch of salt
  • 2 teaspoons cinnamon
  • 350g ground almonds
  • flour to roll out the dough


To make the cinnamon stars you first need to sift the confectioner´s sugar and make sure they have no lumps. Now you need to beat the eggwhites and the salt and one by one add the sifted sugar and whip until it´s fluffy and creamy. When it´s done take about 4 Tablespoons and set them aside. You will need it to cover the stars later.

Now mix together the almonds and cinnamon and add the rest of the egg-sugar mixture. Mix it until you have a nice dough. You can work in a bit of flour if the dough is too sticky. Now just roll out the dough about 2-3 cm thick and with a star cookie cutter cut out your cookies and put them on a baking rack covered with a baking sheet.

Now, most of the people immediately cover the stars with the meringue (eggwhite-sugar mixture) and bake them. But I don´t like to do that because then the meringue turns brown and it doesn´t look as good. The better way to do it is to prebake the cookies on 170°C for about 8 minutes, reduce the heat to 90-100°C. meanwhile you cover the prebaked stars with the meringue (you can use a spoon or a baking brush for it) and then put them back in the oven.

Take a wooden spoon (anything heat resistant works here) and put it between the oven and the door so that the oven will remain open, just a tiny gap. This way you will get a nice crust on top of the cookies. Bake them for another 10 – 15minutes, take them out and let them cool. Now all you need to do is eat them 😉
